Yeastless rusk is manufactured by baking dough, containing a raising agent, through a sheeting process. This produces the maximum amount of crust, which is ideal for water absorption. The baked dough is dried, ground and sifted into various grades. Grist sizes vary from very coarse to very fine, producing different textures in the finished product.
We also sell bread rusk for those looking to produce a more traditional product.
